Kuze Fuku Nori Butter

This is the Kuze Fuku Nori Butter, a sweet and savoury Japanese condiment made from slowly simmered black nori seaweed blended with butter.

The condiment presented with a deep black-brown hue and a somewhat dense, sludgy appearance. Aroma opened with sweet-salty, oceanic umami notes.

When served over steamed rice, spread over warm toast, stirred through pasta or paired with warm vegetables, the residual heat melted the butter within the condiment. Initial contact delivered an immediate combination of sweetness, saltiness and deep oceanic umami, distinctly recalling sweet soy sauce alongside the rich, sweet-savoury depth of butter.

The nori contributed little noticeable textural variation, instead functioning primarily as a flavour component that reinforced the oceanic complexity of the sweet-savoury base. The combination produced a concentrated, persistent flavour that encouraged another bite. However, the condiment was less suited to eating on its own, where its slightly slimy consistency and concentrated sweet-briny profile became more pronounced.

Overall, a seaweed and butter condiment with an immediate, concentrated sweet-savoury flavour profile and minimal textural variation, resulting in a rich oceanic umami character best balanced through pairing with other foods.

This Kuze Fuku Nori Butter contained 145 g. It was produced in Japan and purchased in Sendai, Japan in 2024.
