This is Springbok Delights, a South African delicatessen specialising in biltong, droëwors and other traditional cured meat products.

Traditional ($85.00/kg)

Initial contact delivered a soft and tender texture with minimal resistance. The beef flavour was clean and well-developed, allowing the cured meat character to remain the primary focus. Texture remained cohesive throughout, with very little gristle or connective tissue becoming lodged between the teeth. Structure: balanced and approachable.

Fatty ($85.00/kg)

Initial contact delivered a similarly soft and tender texture to the Traditional variety, supported by a richer mouthfeel from the additional fat content. Through the mid-palate, pockets of softened fat contributed extra savoury richness and moisture. However, this came with a corresponding increase in connective tissue and gristle, some of which remained between the teeth after chewing. Structure: richer but less refined.

Wagyu ($100.00/kg)

Initial contact delivered a texture comparable to the Traditional variety, with a soft chew and tender bite. Through the mid-palate, a deeper savoury profile emerged as the meat softened on the palate, developing a pronounced umami richness that distinguished it from the other varieties. The tenderness remained excellent throughout, while the greater fat marbling contributed a fuller and more rounded flavour. Finish resolved into a lingering savoury depth. Structure: highly cohesive and flavour-driven.

Teriyaki ($85.00/kg)

Initial contact delivered a noticeably drier texture than the previous varieties. The flavour profile was reminiscent of the aroma encountered when entering an Italian delicatessen, combining cured meat, seasoning and subtle sweetness. While still enjoyable, the drier structure reduced some of the tenderness that defined the Traditional and Wagyu options. Structure: flavourful but less supple.

Smoky ($85.00/kg)

Initial contact delivered a similarly dry texture, with the smoke component immediately apparent. The flavour strongly recalled smoked leg ham, with the smokiness integrating cleanly into the cured beef base. Texture remained firmer and less yielding than the Traditional, Fatty and Wagyu varieties. Structure: smoke-forward and comparatively lean.

Chiptole ($85.00/kg)

Initial contact delivered a soft and tender texture comparable to the Traditional variety. The chipotle seasoning introduced a deeper savoury profile. Through the mid-palate, the smoky, earthy qualities of the chipotle became more apparent, adding subtle complexity without introducing significant sweetness. The finish resolved into a gentle, lingering chilli warmth that gradually built between bites without becoming particularly spicy. Structure: savoury, balanced and mildly warming.


Overall, a biltong specialist defined by well-executed cured beef flavours and strong textural control, strongest where tenderness and natural beef character are allowed to remain the focus.

The Traditional and Wagyu varieties were the standouts. The Traditional offered the cleanest balance of tenderness and beef flavour, while the Wagyu added a notable increase in savoury depth without sacrificing texture. Both would be easy candidates for repeat purchase.
