Self-Prepared Beverages

These are beverages that require the user to prepare them. The drinks may come in various forms, such as loose leaf, powder, pods, or instant mixes and syrups, but require the addition of water, milk, or other components to be made ready for consumption.

Teas

These are leaf teas prepared by pouring hot water over cured leaves of the Camellia sinensis.

Teas are prepared using quantities, times and temperatures that suit our tastes and often deviate from those recommended. Generally, we use 3 g for 200 ml, with our black and oolong teas steeped at 85ºC for 3 minutes, Chinese green teas at 80ºC for 2 minutes, Japanese green teas at 75ºC for 1.5 minutes, and white teas at 80ºC for 3 minutes. Also, tea bags usually have broken leaves and require 0.5-1 minute less steeping time than a similar loose leaf. Specific numbers used are provided for each tea.

Infusions

These are infusions prepared by steeping herbs, spices, or other plant material in hot water and do not usually contain caffeine.

Infusions are prepared using quantities, times and temperatures that suit our tastes and often deviate from those recommended. These were usually in tea bag form, and where loose, we use 3 g for 200 mL at 96ºC for 4-5 minutes generally. Specific numbers used are provided for each tisane.
