Bakerdream Osmanthus Flower Tea

This is the Bakerdream Osmanthus Flower Tea. Much like the products from Sugi Bee Garden, it can be used as a jam on toasted bread, a topping for dessert, or mixed with fresh fruit or yoghurt. Our preference was to use it as a base for a drink.

The osmanthus flowers made up greater than 20% of the content, while the sweetness came from a blend of cane sugar and honey, to give the jam a thick molasses-like consistency with the fragrant, sweet scent of osmanthus flowers.

Prepared with a dilution ratio of 1 part jam to 1 part hot water (to loosen the jam) and 4 parts cold water (for a cold drink), the drink was an opaque pale yellow colour with osmanthus petals floating throughout and the same sweet osmanthus aroma. Consumed chilled, the drink had a slight viscosity yet smooth mouthfeel with the osmanthus notes coming through brightly at the head of each sip with a delicate sweetness that spread across the palate just as the petals brought a subtle and pleasant texture that heightened the floral quality of the flavour. At this dilution ratio, the sweetness was balanced and receded in the finish to leave a gentle floral aftertaste osmanthus lingering on the palate. Overall, the jam was an enjoyable and elegant base for an osmanthus flower tea and would work similarly well served on toast, yoghurt, or as a sweetener in coffee.
