This is the Cassia Black Tea with Mousse ($7.50, +$1.00 for bubble, no ice, light sweetness). The tea was presented in distinct layers, with black tapioca pearls at the bottom, an opaque tan layer for the tea in the middle, and an opaque white layer for the mousse on top.
Before mixing, the tea presented a robust vanilla-infused black tea profile with a warm and floral fragrance, partially attributable to the cassia. Nonetheless, it carried a somewhat thin consistency, creating a contrast with the creaminess suggested by the vanilla flavour. However, when combined with the mousse, evoking the sweetness of vanilla cream, the tea underwent a notable transformation. The mousse seamlessly complemented the tea base, introducing a velvety texture and a subtle creaminess that effectively smoothed any hint of harshness inherent in the black tea. The tapioca pearls were impeccably prepared, maintaining a pleasing chewiness and an ideal level of sweetness.
While this tea may not be a bubble tea we’d readily reorder, it undoubtedly brought a unique offering to Sydney’s bubble tea scene.
