
This is the Bibigo Sliced Cabbage Kimchi. It contained 63.7% salted napa cabbage, and 13% red pepper paste.
Upon opening, the kimchi released an intensely pungent garlic aroma. The slices varied in size, with the largest measuring around 4 cm. Visible pieces of red pepper, onion, and garlic accompanied the cabbage.

Each bite-sized piece delivered a cool, gentle crunch, with a pronounced garlic flavour and a steadfast spiciness that intensified with each bite, alongside a subtle fermentation “funk” from lactic acid bacteria. This rich, spicy, and savoury flavour made it an excellent accompaniment to soup and rice in the style of gukbap, which tempered the heat of the kimchi while adding depth and variation to the underlying dish. We prefer this original napa cabbage kimchi over the young radish leaves and radish variety.
This Bibigo Sliced Cabbage Kimchi contained 500 g. It was produced in South Korea and purchased in Sydney, Australia in 2024.
