Fujiya x Nippon Yell Palettie Pineapple Tart

This is the Fujiya x Nippon Yell Palettie Pineapple Tart, made with juice from pineapples cultivated in Okinawa Prefecture.

Each box contained eight individually sealed cookies.

Each cookie measured approximately 4.5 × 3.5 × 1.0 cm and featured a golden-tan border about 0.5 cm thick surrounding a yellow centre scattered with white chocolate chips. The aroma was distinctly that of ripe golden pineapple—bright, sweet, and true to fruit.

On tasting, the outer border provided a crisp bite with a caramelised depth from Maillard browning, contrasting with the softer, moister pineapple centre. The pineapple flavour was vivid and well-developed, with no artificial edge. The inclusion of white chocolate chips introduced a smooth, creamy sweetness that tempered the tartness, contributing a vanilla-like roundness often associated with classic pineapple tarts.

The textural composition—the crisp edge, yielding centre, and melting chocolate—created a layered sensory experience. Within the Palettie range, this pineapple tart variant was the most successful in terms of both flavour clarity and balance. It captured the juicy, sweet-tart character of a traditional pineapple tart in an inventive cookie format, with greater presence and articulation than the melon or white peach varieties.
