Kabaya Tough Gummy Ume Mania is a Japanese gummy confectionery made using concentrated juice from Nankō ume, a variety of Japanese plum known for its balance of sweetness and acidity.

Each gummy was cuboid, approximately 1.5 cm per side, and coated in a fine layer of sour crystals. The gummies came in two hues—red and green—each delivering a distinct ume expression. The red variant leaned more tart, offering subtle sweetness with a sharp, herbaceous lift mid-bite, reminiscent of akajiso (red shiso). In contrast, the green variant presented a juicier, rounder sweetness, though with less complexity. The even distribution of both variants in the bag allowed for alternating consumption, maintaining a consistent ume profile with refreshing tonal shifts between sour and sweet.

The texture was characteristically tough—approximately a 5 on the Meiji chew scale—requiring deliberate effort to chew, yet remaining pliable and satisfying. Flavour release was immediate and persistent, with the red variant showing greater intensity and no perceptible gelatin finish, while the green variant exhibited a slightly more noticeable gelatinous mouthfeel at the end.
