The marshmallow gummies took the shape of water droplets, measuring approximately 3 x 2 x 1.5 cm, and emitted the sweet-tart aroma characteristic of ume. Despite the packaging’s translucent window suggesting a vivid pink hue, the actual colour was a delicate pastel pink.

Upon tasting, the surface-coated sour crystals initiated a gentle burst of acidity that rapidly intensified into a pronounced, mouthwatering tartness of fresh ume mid-bite. The acidity receded quickly as the crystals dissolved, allowing the sweet apricot undertones of the ume to take prominence, leaving a clean aftertaste. Unlike Western marshmallows, the texture of these marshmallows was firm, resembling that of gummy candies. The initial surge of acidity mirrored the initial sharpness of a plum soda, eventually mellowing into sweeter notes as the palate adjusted to the acidity. Overall, these marshmallow gummies were delightful and worth repurchasing seasonally.
