
This is the Tohato All Azuki Koi Matcha, a layered biscuit featuring pastry using stoned-milled matcha from Uji, Kyōto and a sweet azuki bean filling.

Each pack contained six individually sealed packets, each containing two biscuits.

The biscuits presented as square pieces measuring approximately 4.5 cm across and 1 cm in height. The surface carried a golden-brown hue with scattered deep red-brown patches where the azuki filling showed through, alongside deep green areas where the matcha dough was exposed. The structure appeared dense and layered. Aroma opened with earthy red bean notes supported by a fresh, grassy matcha profile, producing a distinctly Japanese aroma.

Initial contact delivered a smooth exterior that yielded into a surprisingly dense yet tender structure while retaining its overall firmness. Rather than fracturing with a crisp snap, the biscuit separated into delicate flaky layers that progressively softened on the palate, developing an almost moist, cake-like quality. The matcha provided a mellow grassy profile that remained fresh without introducing bitterness.
Through the mid-palate, the flavour gradually shifted towards the earthy sweetness of the azuki. Ribbons of bean paste interspersed with whole beans introduced subtle textural variation while reinforcing the filling’s rich, rounded character. Towards the finish, the azuki became the dominant flavour, peaking with a dense earthy sweetness before clearing gradually from the palate. Compared with the An Butter variant, where the buttery pastry enhanced the bean filling with a warm, savoury richness, the matcha contributed a fresher, cleaner profile that allowed the sweetness of the azuki to become more pronounced.
Overall, a layered biscuit with a layered flavour progression and cohesive textural development, resulting in a balanced interplay between fresh matcha and sweet azuki.
