
One Cuisine is a Chinese restaurant that offers yum cha during the day and transforms into a seafood restaurant in the evening. We had the chance to experience both services.

Yum Cha Service
Their morning yum cha service on Monday to Friday from 7:00 AM – 11:30 AM charges the following rates:
- Small: 18.8 HKD/3.76 AUD
- Medium: 25.8 HKD/5.16 AUD
- Large: 29.8 HKD/5.96 AUD
- Special: 33.8 HKD/6.76 AUD
- Top: 36.8 HKD/7.36 AUD
Notwithstanding these charges, numerous dishes featured on the primary menu were also included in a separate menu (solely in Chinese and limited to each store) and were obtainable at an additional discount during the morning period. (Refer to the order sheets at the end of the yum cha section for details.)
Dumplings
The steamed dumplings were over-steamed, leading to a sticky and mushy wrapper. On a brighter note, their soup dumplings and fried dumplings showcased superior execution, featuring silky smooth wrappers for the former and a crisp crunch with minimal oiliness for the latter. The ham sui gok had a pleasingly crunchy exterior that yielded to a chewy glutinous texture enveloping a savory filling. The interplay of these textures was highly satisfying.

Rolls
As with the steamed dumplings, the steamed rice rolls were also over-steamed, giving them a mushy soft texture. The singular prawn in each roll was also rather disappointing.

Buns
The steamed buns were better than the dumplings and rolls, featuring a light and fluffy dough that offered a satisfying contrast to the filling. However, the lotus paste and egg yolk were still too rich for our preferences.

Meats and Seafood
The steamed and deep-fried meatballs had a pleasing bouncy texture and flavor. However, the opaque grey appearance of the clam sauce accompanying the fish balls was somewhat unappealing, despite its rich seafood taste. As for the clay pot rice, it was decent as a sticky rice and lap cheong dish, yet it fell short of the desired crispy base, with the slices of duck also being a touch dry.

Vegetables
We enjoyed the combination of contrasting textures in these dishes: the combination of the softness of the eggplant with the bounce of the fish cake; and the crunch of the lotus also provided a pleasing contrast to the crispness of the dumpling wrapper and the bounce of the fish cake.

Sweets
The five bean cake was unexpectedly delightful, presenting a variety of textures from the assorted grains that harmonized well with the subtly sweet jelly binding them. The white sugar sponge cake had a soft and spongy texture, featuring a gently sweet and slightly sour taste from the batter’s fermentation before cooking. While the osmanthus was visually apparent, its influence on the flavor was less pronounced.

Dinner Service
We also visited One Cuisine for their dinner service, ordering their Red Sun Lobster and Suckling Pig Whole Set for 12 persons (3000 HKD/600 AUD), which consisted of the following items:
- 1 x 2.5-pound lobster with yee mein
- 1 x large red suckling pig
- 1 x medium stir-fried clams with soy sauce
- 12 x signature pomelo honey prawns
- 12 x golden pearl abalone with lettuce
- 1 x 2-pound steamed grouper
- 0.5 x king sized crisp roast goose
- 1 x large bamboo fish maw belly wings
- 12 x layered jujube and ginger steamed cake
- 12 x tea

Lobster Yee Mein (2.5-pound lobster).
Wok-fried with ginger and scallion, the lobster pieces were generously coated in a savoury sauce, with many conveniently freed from their shells for effortless consumption. The sauce was so ample that the bed of noodles was immersed in it. Despite the abundance of sauce, the lobster pieces were well-cooked, achieving a tender texture without becoming chewy.

Suckling Pig (large, whole)
The skin was covered in tiny blisters, offering a delightfully crisp crunch. There was just the right amount of fat between the skin and the tender, juicy meat, with a subtle hint of salt to enhance the pork flavor. Undoubtedly, this was our preferred dish among the selection.

Stir-fried Clams (medium)
The clams were wok-fried with prawns, chives, and cashews, presenting a blend of contrasting textures. However, the distribution of chilli in the sauce seemed uneven, with some bites lacking heat while others were overly intense.

Pomelo Honey Prawns (12 pieces)
We appreciate honey prawns, and these were decent, featuring plump and crunchy prawns. Although the batter was thin, it could have been crisper, and the sauce might have benefited from a more pronounced honey flavour.

Golden Pearl Abalone with Lettuce (12 pieces)
The abalone offered a pleasantly tender bite, avoiding chewiness, and the oyster sauce complemented the wilted iceberg lettuce effectively.

Steamed Grouper (2 pounds)
The steamed fish had a flaky and moist texture, with the soy sauce enhancing its natural fish flavor without overwhelming it.

Roast Goose (half, king sized)
This marked our initial encounter with goose, and its taste resembled that of a richer duck, providing an enjoyable experience.

Bamboo Fish Maw Soup
I’ve never been fond of the collagen-rich viscosity of fish maw soup, and this instance was no different.

Layered Jujube and Ginger Steamed Cake
The spiciness from the ginger juice was noticeable and balanced by the alternating layers of sweetness from the red dates.
Final thoughts
In general, several of their yum cha offerings were over-steamed, resulting in a less appealing mushy texture in the dumplings and rolls. Nevertheless, their fried dishes exhibited better execution. Regarding their dinner service, overall, it was a pleasurable experience with a diverse selection of fresh ingredients encompassing a range of quintessential Chinese seafood dishes. However, in the future, we would be inclined to order a la carte dishes that align more closely with our preferences.
