
This is the Patisserie Verduveine Tsugaru Apple Madeleine (¥185), a madeleine featuring Tsugaru apples.

The madeleine measured approximately 5 cm in diameter and 1 cm in height, with a golden top encased in a thick wax liner.

Once removed from the liner and placed upside down on a plate, two slices of Tsugaru apple were visible. The madeleine itself was light and fluffy, with a loose crumb, offering a warm, eggy flavour. The apple slices were firm, providing a gentle crunch even after baking, which contrasted pleasantly with the soft texture of the madeleine. This firmness made it more enjoyable than the Kogashi Apple Madeleine, where the apple was softer and melded into the cake. Despite the firmness of the apple slices, the madeleine had absorbed sufficient apple syrup to enhance its moistness, creating a balanced combination of a fine crumb and a fruity sweetness. The baked Tsugaru apples contributed a rich apple flavour, demonstrating their suitability for baking despite being less ideal for juicing. This madeleine was delicious and worth repurchasing.
