
This is the Ryūshōdō Yona-wana Baumkuchen.

The cake featured four layers of matcha in the centre, surrounded by five layers of plain vanilla, with the external layer coated in white chocolate. It measured about 6 cm in diameter and 1.2 cm in height.

Upon tasting, the cake layers had the characteristic dense yet soft crumb of a baumkuchen, quickly softening to a rich, buttery mouthfeel. The matcha layers offered a mellow sweetness with a subtle grassy quality, well balanced by the vanilla layers, which also provided a visual contrast between the green and yellow. The white chocolate coating added a mid-bite sweetness, tempering the matcha as it reached its fragrant peak, and finishing with a gentle sweetness. Overall, this baumkuchen was soft and moist, with the matcha impeccably balanced, allowing all flavours to harmonise into a delicious treat.
