
This is the Zokoko Artisan Chocolate Genmaicha. Matcha was blended with their house white chocolate, and topped with candied green tea and caramelised toasted rice. It contained a minimum 37% cocoa solids, 6% toasted rice, 4% matcha and 1% green tea.

The bar was matcha white chocolate with one side covered in candied green tea and caramelised toasted rice.

Upon tasting, the toasted notes came through immediately, and the matcha white chocolate melted swiftly afterwards to a rich, creamy quality with a slight bitterness that lingered on the palate. The bits of candied green tea delivered a slight grassy vegetal quality that was subdued in the white chocolate. However, the pieces of toasted rice were incredibly firm, difficult to bite through rather than the popcorn rice, and indeed remained behind in the finish, leaving a pleasant rich nuttiness to complement the matcha in the aftertaste but also remaining physically to be chewed long afterwards. Overall, while the genmaicha was more immediately evident than in the black sesame, the firmness of the toasted rice meant the textures failed to harmonise.
