Calbee Kataage Potato Yuzu Kaoru Tai Dashi

This is the Calbee Kataage Potato Yuzu Kaoru Tai Dashi, a limited-edition flavour developed in collaboration with Kataage fans, who selected tai dashi (red sea bream stock) as their preferred profile. Yuzu was later introduced as a complementary “secret ingredient” to enhance the flavour.

The chips were relatively small, measuring approximately 3–4 cm in diameter and about 1 mm thick. They had a golden hue, lightly dusted with red and white specks of seasoning. The aroma was distinctly umami-rich, with a mellow fish character reminiscent of sashimi accompanied by ponzu.

The texture featured a firm, snappy crunch, typical of kettle-cooked chips. From the first bite, the flavour of red sea bream was immediately recognisable—clean, savoury, and unmistakable. Mid-bite, the yuzu revealed itself subtly: a fragrant floral note that contributed aroma rather than sharpness, offering depth without citrus acidity. The umami intensified towards the finish, deepening into a profile evocative of a tai donburi with a splash of ponzu. The underlying potato flavour remained present throughout, rounding out the experience with warmth and richness.

This was an elegant, well-balanced chip with exceptional texture and a nuanced, savoury character. An outstanding flavour that would be a regular purchase were it not a limited release.
