This is the Nestlé After Eight, an iconic after-dinner mint chocolate featuring thin wafers of mint fondant enveloped in dark chocolate.
The fondant at the core of After Eights is crafted from a firm paste consisting of sugar, water, and the enzyme invertase, the latter allowing the fondant to be readily coated with dark chocolate. Post-manufacture, the enzyme gradually converts common sugar into more soluble sugars, glucose and fructose, resulting in a smoother, liquid consistency.

In the Christmas edition tin, each box was individually sealed, and there were two 200 g boxes per tin.

Within each box were 23 mint wafers, each measuring approximately 4 x 4 x 0.25 cm and individually wrapped in paper sachets.

The underside of each After Eight square is imprinted with the logo.
Upon tasting, the thin chocolate coating (less than 1 mm thick) allowed for a clean bite through to the mint fondant centre. The fondant was oozy without being overly liquid, creating a neat and enjoyable experience. The mint flavour took the forefront on the palate, with its soft consistency spreading refreshing notes seamlessly and melting into a smooth creaminess. The mint flavour persisted from start to finish, with the dark chocolate subtly contributing richness and a hint of bitterness to complement the mint without overshadowing it. The flawless execution of textures and flavours makes it evident why After Eight has remained the iconic after-dinner mint since its initial production in 1962.
This Nestlé After Eight contained 400 g (200 g or 23 pieces x 2 boxes). It was produced in Germany and purchased in Sydney, Australia in 2023.
