In Yamagata Prefecture, ‘La France’ pears undergo a controlled storage process at low temperatures, typically maintained within the range of 2 to 5°C immediately after harvesting. This controlled environment limits their respiration for approximately 10 days. Subsequently, upon being returned to room temperature, these pears commence a rapid and profound respiration phase, catalysing the conversion of internal starches into sugars. This managed ripening procedure spans around two weeks, culminating in pears that are deemed ready for consumption.

The gummies were an opaque green hue, with each piece measuring approximately 2 cm in diameter and 1 cm in height. They emitted a pleasant, sweet pear fragrance. Upon tasting, the gummy’s exterior offered a resilient and chewy resistance to the teeth prior to yielding to the softer center, characterized by a jelly-like texture that lacked elasticity. The familiar, sweet pear notes were discernible, initially subtle before progressively intensifying in depth during the middle of each bite as the supple center dissolved. The flavour profile mirrored the succulent sweetness of the La France pear, yet it did not possess the potency exhibited by the Kanro Puré La France Pear Gummy, which adeptly captured the intricate flavour of the fruit’s peel.
