The handmade noodles were long, chewy, and bouncy without being doughy. While the soup itself was too salty to sip comfortably, it delivered a bold flavour to the noodles. A generous portion and one worth reordering.

Tomato Egg Stir-Fried Soup Noodle ($15.80)
The chicken soup base was immediately evident, with the tomato flavour expressed mainly through fresh tomato pieces that retained a clean bite. A deeper, riper tomato profile — such as from roma or cherry tomatoes — might have elevated the dish, though such refinement is not typical of this style. The egg was expertly scrambled, light, and feathery, contrasting with the chewy noodles, fresh tomato, and crisp woodear mushroom. The broth was lighter and more suitable for sipping, though the dish overall felt modest and not as compelling as other options on the menu.

Handmade Noodles with Roasted Lamb ($17.80)
The hand-pulled noodles again displayed excellent texture and thickness. The lamb, though slightly overcooked, paired well with the noodles, carrying a robust cumin-forward seasoning and tangy vinegar-based chilli oil that offered moderate heat. The onion was well cooked to remove sharpness, while the cucumber provided freshness and crunch. A strong dish and one worth reordering.

Sesame Noodles (Not Spicy) ($15.80)
This version featured the same noodles coated in a thick, creamy white sesame sauce that clung beautifully to each strand. The flavour was rich, nutty, and rounded, enhanced by the crunch of crushed peanuts and the savoury depth of minced garlic. Fresh cucumber and carrot contributed brightness and texture, though the absence of coriander—pictured on the menu—was missed.
Overall, Xi Bay delivered robust, full-bodied flavours and generous portions. The roasted beef noodles were the standout, which highlighted both the tenderness of the beef and the quality of the handmade noodles.
