Jasmine Mao Jian Green Tea (top, off-white with black flecks) — awarded a Bronze medal at the Sydney Royal in 2025. The gelato presented with a smooth, uniform structure. On tasting, the initial contact delivered restrained jasmine florals, avoiding sharpness or perfume. Through the mid-palate, the green tea base became more apparent, contributing a mellow, slightly vegetal profile. The finish remained clean, with light sweetness and no detectable bitterness or astringency. Texture was smooth and dense, with a fine, continuous churn.

Yunnan Black Tea (bottom, tan with black flecks) — presented with a similar dense, uniform structure. The initial contact delivered a recognisable aromatic depth characteristic of Yunnan tea. Mid-palate development introduced lightly caramelised warmth, with a rounded profile that avoided heaviness. The finish carried a soft persistence without bitterness or astringency. Texture remained consistent, with a smooth, cohesive body.

Both dairy flavours were notably smooth and creamy, with a finer texture than many competitors due to continuous churning, surpassing even Ice Kirin Bar in consistency.

Osmanthus Rice Wine Sorbet (top; white with yellow and brown flecks) — the sorbet presented with a lightly aerated structure. On tasting, the initial contact delivered a clear osmanthus profile, with floral notes resembling honeysuckle. Through the mid-palate, a subtle tang from the rice wine emerged, balancing the sweetness. The finish remained clean and lightly refreshing, with no excess acidity. Texture was smooth for a sorbet, without noticeable iciness.

Kiwi and Jasmine Green Tea Sorbet (bottom; beige with brown flecks) — initial contact delivered bright acidity consistent with fresh kiwifruit. Mid-palate development introduced softer jasmine florals, supported by a gently rounded green tea base. The fruit remained dominant, with the tea providing structure rather than overt flavour. The finish tapered cleanly, with lingering acidity. Texture remained smooth, with the presence of fresh kiwi contributing slight variation.

The sorbets demonstrated a strong command of tea-based and floral profiles, with each flavour showing clarity, balance and a clear sense of intention.

Rose Osmanthus Green Tea (top; off-white) — presented with a dense, uniform structure. On tasting, the initial contact delivered layered floral notes, with rose and osmanthus both clearly present. Through the mid-palate, the flavours integrated without either dominating, maintaining balance. The finish remained smooth and cohesive, with no detectable iciness. Texture was notably fine and creamy.

Jasmine & Grape (bottom; beige with green flecks) — initial contact delivered a combination of floral jasmine and bright grape sweetness. Mid-palate development emphasised a light, fruit-forward profile with moderate sweetness. The finish remained clean and refreshing, with the floral notes persisting lightly. Texture was smooth and lightly aerated, maintaining consistency throughout.

Overall, Whiskers Gelato offers refined tea- and floral-driven gelato and sorbet with balanced sweetness, clear flavour definition, and consistently smooth texture.
