Besides Max Brenner, there’s a dearth of dessert options open late at Macquarie Centre. We manage, though, stopping by Pappa Roti before heading to join the almost guaranteed queues at PappaRich upstairs.

Egg waffles ($4.00) are a recent obsession of mine, and here, they’re made fresh to order, then cooled on a rack situated between two fans for about 5 minutes.

The result is the cooling is egg waffles that are super crispy on the outside with a delicious eggy inside. There’s no steam to soften the egg waffles here unlike at Marble Street upstairs. The innards have less of a cake texture than Marble Street but lack the addictive bounce and lightness of the ones at Come Buy.

The egg waffles also come with your choice of ice cream for $7.00, including flavours such as rosewater, taro, thai milk tea, durian, bubblegum as well as your more ordinary flavours. Perhaps next up though, is to try their signature custard filled crispy buns.
