Nissin Foods Demae Iccho Spicy Hot Tonkotsu

This is the Nissin Foods Demae Iccho Spicy Hot Tonkotsu.

Each package included a noodle cake, along with soup base and chilli sauce sachets (15.8%). The soup base featured a powdered mix containing ingredients such as onion, sesame seeds, pork and chicken flavour, and dehydrated green onion. The chilli sauce included miso paste, beef, pork and chicken flavourings, chilli bean sauce (sacha sauce), and garlic oil.

The noodles were prepared by boiling them in 500 ml of water for three minutes. While the noodles cooked, the soup base was placed in a bowl. Once the noodles were ready, the hot water was poured into the bowl to dissolve the soup base, followed by the noodles, before stirring well and serving.

The tonkotsu soup base had an opaque beige hue topped with a bright red layer of chilli oil, emitting a savoury aroma. On tasting, the creamy savouriness of the miso shone through the chilli’s intense spiciness. The chilli brought a commanding heat with a numbing mala quality, coating every strand of the noodles evenly. The noodles themselves had a good al dente texture, retaining their firmness even after sitting in the broth. However, while the spiciness was impressive—delivering a heat level that many “spicy” instant noodles fail to achieve—the miso tonkotsu broth lacked the complexity typically associated with this style, relying heavily on the spiciness rather than a depth of flavour.
