Nissin Foods Demae Iccho Tōkyō Shōyu Tonkotsu

This is the Nissin Foods Demae Iccho Tōkyō Shōyu Tonkotsu.

Each package included a noodle cake, along with soup base and seasoning sauce sachets. The soup base was a powdered mix containing ingredients such as garlic, fish, pork and chicken flavourings, onion, spices, and dehydrated green onion. The seasoning sauce was a paste made with soy sauce, chicken, pork, kelp, and shrimp flavourings, sesame oil, miso sauce, and garlic.

The noodles were prepared by boiling them in 500 ml of water for three minutes. While the noodles cooked, the soup base was placed in a bowl. Once the noodles were ready, the hot water was poured into the bowl to dissolve the soup base, followed by the noodles, before stirring well and serving.

The shōyu soup base had a translucent brown hue and emitted a savoury aroma with a hint of sesame oil. On tasting, the broth delivered a savoury soy flavour with a well-rounded meaty umami reminiscent of pork broth. Despite this richness, it remained light and easy to eat due to the clarity of the broth, which lacked the creaminess often associated with tonkotsu. The noodles had a satisfying al dente texture, holding their firmness even after soaking in the broth. Overall, while the flavour was enjoyable, it felt somewhat indistinct and lacked the bold character often found in simpler varieties.
