Demian Goma Bakkashi

Demian (デミアン) is a bakery located in Fukushima City, known for its sesame crackers, or goma bakkashi, which are available at various omiyage stores throughout Fukushima Prefecture.

Each package contained two crackers made by roasting sesame seeds, hand-rolling, and baking them into circular shapes approximately 9 cm in diameter and 1.5 mm thick. The crackers were slightly tacky to the touch, with a light, flexible texture that broke into segments with crisp ease, without being snappy or soft.

White Sesame

This variety offered a mild nuttiness with a mellow sweetness that emerged towards the finish. The flavour profile evoked the taste of sweet miso, with its gentle and balanced notes.

Golden Sesame

Made from unhulled white sesame seeds, this version had a more aromatic and complex nuttiness, teetering on bitterness without crossing the line. Its bold, toasted flavour made it the most nuanced of the three.

Black Sesame

The richest in flavour, this cracker balanced the earthy robustness of black sesame with a slight bitterness reminiscent of the golden sesame, though it lacked the same aromatic depth. Its finish featured a hint of the sweet nuttiness found in the white sesame, creating a well-rounded flavour.

Overall, these Western-style sesame rice crackers were enjoyable for their light texture and fragrant sesame flavours. They offered a pleasing variety across the three types and are worth repurchasing.
