The beverage presented with a layered appearance, with passionfruit pulp and seeds alongside white rectangular pieces of coconut jelly and regular jelly concentrated at the base, gradually transitioning into a golden-yellow hue towards the top.
Initial contact delivered bright passionfruit acidity, with distinctly tangy tropical fruit notes. Through the mid-palate, linden honey emerged with subtle floral and earthy notes, adding depth to the delicate, dewy florals of the jasmine tea. The honey also provided sufficient sweetness and viscosity to give the tea body without requiring additional sugar. Towards the finish, the passionfruit pulp contributed a soft, puréed texture, while its seeds introduced a subtle nuttiness. These contrasted with the bouncy chew of the nata de coco and the thinner, more slippery texture of the regular jelly. The different inclusions provided textural variation without overwhelming the underlying tea.
