Towards the end of our (short) quest for the perfect banana bread, we tried this Just Bake Banana Bread that we picked up from the bakery outside the Coles in Westfield Parramatta.
We had high hopes for this banana bread given the high percentage of banana used (26%) at the very reasonable price of $5.00 for 1 kg.
First impressions, though, revealed a banana bread that didn’t have the smell of banana that is characteristic of banana bread, but a stronger sugary sweetness. This same sweetness carried through in the taste that recalled more of a floury cake than a bread with the banana notes far less pronounced than we’d expected from the high banana content and the dark tan colour of loaf. Overall, the banana bread is moist with a tender, yet not overly crumbly, texture, but could do with a more stronger banana flavour with a more restrained sweetness.
