Takara Kabosu & Kabosu

Kabosu is a juicy citrus fruit that’s closely related to the more popular yuzu.  Ōita Prefecture in Japan accounts for 97% of the country’s kabosu production. This Takara Kabosu & Kabosu is a regional specialty for Ōita, using kabosu from the region, that we picked up during our visit in 2019.

Each box contained steamed cakes, which are made with kabosu juice and filled with a custard-style cream.

Each cake is individually wrapped in wax paper.

The cake is a beautiful pale green colour with a fragrant kabosu aroma.

Upon tasting, the steamed cake is soft with a fine, moist crumb that delivered a bold kabosu flavour — much like a sweeter lime with the sharpness of a lemon — with the zesty edge rounded by the creamy custard centre but lingering through to the aftertaste. While these cakes lack the prominent sourness characteristic of kabosu, we do enjoy the sweetened, fresh flavour of the fruit as well as smooth melt-in-your-mouth texture of these steamed cakes immensely.
