Mid-spring, Bubble Nini Tea released this Lychee Sparkling ($8.00, large, regular sweetness, regular ice). As it’s name suggests, it’s a sparkling tea-free lychee flavoured beverage with toppings of lychee jelly, mango pearls, a whole (canned) lychee and fresh lemon juice.
Consumed chilled, the carbonated drink delivered a refreshing lychee flavour with the sweetness from the syrup and jellies along with a slight tartness from the mascerated lychee. The slices of fresh lemon amplify the tartness and together with the fresh lychee restrain the sweetness of the drink so that it avoids artificiality, while the mango pearls nuances the tropical dimension of the lychee as well as textural interest.
