This is the Beksul Real Plum Extract which contained 93% plum extract.
The extract is an almost opaque dark brown colour with a thick syrup consistency and a fruity aroma of ume.
The packaging recommends a dilution ratio of 1 part syrup to 3 parts water, but we find the sweetness is overwhelming without amplifying the ume flavour. Prepared with a dilution ratio of 1 part syrup to 4 parts soda water, the green plum flavour came through with honey-like sweetness and persisted throughout the sip along with an initial moderate acidity that is amplified in the body by the bubbles of the soda water. As the bubbles recede, as does the sweetness of the syrup, leaving the slightly sharp, sweet-tart acidity that I find so alluring about green plums. Overall, I prefer the Ousu no Sato Sarari for its bolder and brighter ume flavour.
This Beksul Real Plum Extract contained 330 ml. It was produced in South Korea and purchased in Sydney, Australia in 2020.
