Beksul Sweet Korean Pancake Mix

This is the Beksul Sweet Korean Pancake Mix, which used a hotteok recipe developed by TOUS les JOURS, a popular bakery chain in Korea.

Each box contained 296 g sweet Korean pancake mix, 100 g jam mix, and 4 g instant dry yeast.

The hotteok was prepared using the following steps:

  1. Add 180 mL of warm water (at 40-45ºC) and yeast to a bowl and stir evenly with a spatula.
  2. Add 1 bag (296 g) of the pancake mix and knead gently with a spatula for 5-10 minutes.
  3. Apply cooking oil to one’s hands, then divide the dough into 8 equal portions.
  4. To each portion, flatten with one’s palm, and add 12 g of jam mix (brown sugar, cinnamon and walnuts) to the centre before folding the dough over to seal the jam mix within.
  5. Place the dough sealed side down on a greased and preheated fry pan. Cook over low heat until the bottom is golden brown (1-2 minutes) then turn over and press flatten, cook for another 1-2 minutes, before flipping again and cooking for another 1-2 minutes.

Each hotteok was about 7-8 cm in diameter and about 1 cm in height. The dough was a surprising yellow colour with a denser, bread-like bounciness to the pancake with the pan-frying giving the hotteok a crispy exterior. The subtle savoury flavour of the dough balanced the cinnamon sugar centre that was molten hot straight from the pan with a subtle crunch from the crushed walnuts. Overall, these hotteok were simple to make with an enjoyable flavour and texture, though their sweetness made them better suited to eating only up to two at a time.

This Beksul Sweet Korean Pancake Mix contained 400 g (296 g sweet Korean pancake mix, 100 g jam mix, 4 g instant dry yeast). It was produced in South Korea and purchased in Sydney, Australia in 2022.
