
This is the Nongshim Shin Ramyun Kimchi, a variation of the original Shin Ramyun that celebrated Korea’s quintessential side dish: kimchi, which is usually made of cabbage fermented with red chilli.

Each package consisted of a cake of fried noodles, a sachet of soup seasoning, and a sachet of flakes (fried kimchi (37%), bok choy, carrot and green onion).

Prepared by boiling the noodles along with the contents of the two sachets in 500 mL of water for a duration of 4 minutes, the noodles emitted an aroma rich in garlic. When served hot, the noodles had a springy texture, adeptly absorbing the broth, which had a moderate level of spiciness, a faint tanginess, and an underlying garlic note. Noteworthy was the resemblance between the revitalized kimchi and freshly sautéed kimchi, which pleasantly surprised us with its deeply savoury flavour and subtle yet perceptible crispness. While making use of the same noodle variety as the regular Nongshim Ramyun, this particular version held our preference due to the intricate interplay of the kimchi’s complexity and the broth’s composition, resulting in a more harmoniously calibrated level of spiciness.
This Nongshim Shin Ramyun Kimchi contained 120 g and came in a pack of 5. It was produced in South Korea and purchased in Sydney, Australia in 2023.
