The raised edges developed an appealing Maillard character, contributing buttery, lightly caramelised notes. However, the pastry base lacked the crispness and structural integrity needed to support the atypical oval shape, resulting in a somewhat soft and underwhelming foundation. The finish remained clean and lightly buttery, though the restrained custard flavour prevented the tart from leaving a particularly memorable impression.
Pineapple Kiss ($2.40) — 45.4% pineapple paste
The pastry featured a pineapple paste filling encased in a fine-crumbed, buttery shortbread shell.
Initial contact delivered a savoury, buttery shortbread that fractured cleanly with minimal resistance. The pastry offered a fine crumb and restrained sweetness that complemented rather than competed with the filling. Through the mid-palate, the pineapple paste developed a balanced sweet-tart profile with a pleasant chew. The filling retained sufficient body to provide textural contrast without becoming fibrous or overly smooth, avoiding the stickiness often encountered in lower-quality pineapple fillings. The finish resolved into lingering buttery pastry notes and gentle pineapple acidity, producing a well-integrated balance between richness and fruit sweetness.
