Mazati Baba Ghanouj

This is the Mazati Baba Ghanouj, made using 79% eggplant and 15% tahini. Mazati is the retail brand associated with the Lebanese restaurant group Al Aseel.

On tasting, the dip presented a beige base flecked with black and tan, with a uniformly creamy texture and no discernible chunks of eggplant. The aroma was immediately rich with charred eggplant smokiness and garlic. The flavour opened decisively with a bold, char-grilled eggplant profile, followed by a pronounced garlicky note and a nutty tahini presence through the mid-palate. As the smokiness intensified, it carried through to the finish with a slight bitterness that lingered.

Overall, an authentic and satisfying baba ghanouj that closely reflects the version served at Al Aseel restaurants, though a fresher, cleaner eggplant profile with less bitterness is preferred.
