Almost simultaneously, the chestnut chocolate began to melt across the palate, releasing a sweet chestnut character reminiscent of the Mont Blanc paste found atop desserts. Through the mid-palate, as the fine crumb of the biscuit dissolved, it released the powdered chestnut, introducing a subtle fine grit across the palate. Rather than being obtrusive, however, this textural element was quickly accompanied by a rich, warm, earthy nuttiness and rounded sweetness from the chestnut. The flavour profile remained authentic throughout, recalling freshly prepared chestnut paste more readily than the candied sweetness that typifies many chestnut-flavoured snacks. Towards the finish, the chocolate resolved into lingering roasted chestnut notes with a gentle earthy warmth, while the biscuit receded into a subtle buttery sweetness. Aftertaste carried the characteristic nuttiness of waguri alongside a delicate residual sweetness.
Overall, a chocolate biscuit confection with a layered chestnut-forward flavour progression and well-integrated textural development, resulting in an authentic expression of waguri that balances sweetness with earthy nuttiness.
