
This is the Kikkoman Soy Milk Unprocessed, featuring a flavour most comparable to raw soy milk. It contains at least 18% soybean solids, significantly more than the 13% in the unflavoured, processed version.
The beverage had a beige hue, similar to its packaging. Consumed cool, it had a thinner mouthfeel than the processed version despite the higher soybean content. The flavour began with a notably more grassy note, contrasting with the beanier taste of the processed version. This developed into the same savoury cereal quality found in the processed version. While the aftertaste was clean, a notable astringency emerged in the finish and lingered long after. Overall, this unprocessed version had a very subtle, almost bland, flavour. Unlike cow’s milk, where processing tends to remove flavour, the processed version had a rounder and richer flavour. Overall, we prefer the processed version for its fuller taste.
