The gelato presented with a muted beige base, dispersed with irregular flecks of pale yellow-green feijoa skin and softened fruit pulp. Aroma opened immediately into a recognisable feijoa profile, carrying tropical perfume and soft white guava-like sweetness.
Initial contact delivered strong feijoa presence, though the structural body leaned icy and slightly gummy, reading closer to a loosened sugar syrup than a tightly churned gelato. Melt resistance was low, with rapid softening on the palate. Through the mid-palate, the fruit profile developed into a sweeter expression than comparable feijoa gelato, reducing the sharper aromatic edges typically associated with fresh feijoa. The embedded feijoa flecks became more perceptible as the sorbet melted, contributing subtle fibrous texture that reinforced fruit authenticity rather than disrupting flow. Finish resolved cleanly, with lingering feijoa aromatics and a light creamy sweetness that avoided heaviness, though without strong structural persistence.
