This is the Cha-no-wa Uji Matcha Matcha Financier, made using Kintenkaku, a high-grade Uji matcha known for its vibrant green colour, rich sweetness, and fragrant aroma.

Each piece measured approximately 7 × 3 × 1.5 cm and had a vivid green hue with browned edges.

On tasting, the financier had a medium crumb. Initially dry on the palate, the butter content gradually melted, yielding a moist, tender interior. The exterior was firmer and slightly drier, carrying more pronounced Maillard notes. The moist centre provided a fuller expression of the matcha—grassy and vegetal with a concentrated umami note—while the almond flour contributed a gentle nuttiness that added depth and softened the matcha’s intensity. The overall bitterness was restrained, appearing only subtly in the finish.

This financier offered a well-calibrated balance between earthy matcha complexity and delicate sweetness. Its textural interplay—firm edges and moist centre—complemented the aromatic vibrancy of the matcha, making it a notable example of matcha pâtisserie.
