The release of juice from the flesh introduced a brighter, more vivid sweetness, reinforcing the natural apple profile without shifting into jam-like tones. Texture transitioned between the smooth gel matrix and the firm, crisp fruit, resulting in a layered but cohesive structure. Towards the finish, the brighter apple notes from the fruit pieces carried through, sustaining clarity. The jelly base receded cleanly without residue. Aftertaste carried a sweet, honeyed apple profile, aligned more closely with fresh, non-oxidised apple juice rather than concentrate.
