A pronounced marine depth emerged from the broth, though the overall flavour remained restrained and understated.
Towards the finish, the savoury stock and rice flavours lingered while the porridge maintained its thick, cohesive structure. The subdued seasoning and gentle flavour profile reinforced its suitability as a comforting, easy-to-digest meal, though additional accompaniments such as kimchi would have provided welcome acidity, texture and contrast.
Aftertaste carried mild dashi notes alongside lingering rice sweetness and savoury marine undertones.
Overall, a Korean rice porridge with a steady flavour progression and cohesive textural development, resulting in a comforting and balanced meal centred on rice, stock and gentle seafood character. While somewhat muted in flavour, the abalone and mushroom provided enough depth and textural variation to maintain interest throughout.
