With C commencing maternity leave, we caught up in the calm before her newborn storm at The Rabbit Hole Organic Tea Bar. 

We’re finally heading into autumn, yet I try the Spring Bouquet ($5.00 a pot), a limited edition blend of rose, chamomile and white tea. Infused for 5 minutes (as directed by staff) results in a clear straw colour with a soft, floral nose. Served hot, the light and slightly sweet notes of white tea came through initially before developing with the prominent earthy floral notes of chamomile in the body before a subtle hint of rose in the finish and a minor astringency in the aftertaste.

Overall, the chamomile flavour dominates the tea. It would have benefited from a shorter steep time more in line with typical times for white tea (up to 3 minutes) and a stronger rose presence for a truly ‘spring’ experience.
