Hòa Hưng Tofu Soy Pudding Brown Sugar Boba

This is the Hòa Hưng Tofu Soy Pudding Brown Sugar Boba. Sold hot from a steamer, it featured a layered appearance: brown sugar ginger syrup at the base, generous slices of soy pudding in the middle, and a topping of tapioca pearls and coconut cream, mimicking the look of a traditional brown sugar boba.

Consumed hot, the tofu was smooth on the palate and had absorbed some of the flavour and colour from the brown sugar ginger syrup. However, the ginger syrup imparted an cloying perfume-like floral quality, which was offputting as it lacked the usual spiciness of ginger. Surprisingly, the tapioca pearls were of higher quality than expected from Hòa Hưng Tofu, providing an enjoyable bounce without the typical firmness or off-flavour in the centre that often characterises poorly prepared instant boba. However, the coconut cream on top had set firmly around the pearls, preventing it from blending with the ginger syrup to add creaminess. Overall, this was an interesting modern take on soy pudding, but not one we would repurchase.
