
This is the Itsuki Tōkyō Yuzu Shōyu Ramen. The typical soy sauce-based soup has an extra zing from the addition of yuzu juice.

Each package contained two serves of noodles. The ramen is prepared by boiling the two serves in 900 mL of noodles for 2.5 minutes before adding the powdered soup base.

The floral citrus notes of yuzu were unmistakable from the broth, and on tasting, came through fragrant with the zestiness of the fruit’s rind but without its acidity and held its own to the soy sauce base. While we usually add less water than the instructions suggest, the soy sauce base here required the full amount of liquid for a balanced savoury flavour. The noodles themselves had an al dente bite at 2.5 minutes and did a decent job of soaking up the flavour of the soup base to enjoy the yuzu notes with every mouthful. That said, we preferred the more sophisticated flavour and clearer broth of the chicken-based Nissin Raoh Instant Noodles Yuzu Salt.
