The egg glaze provided a gentle sheen, but failed to impart the anticipated crispness to the pastry. Instead, the pastry had a somewhat dense texture, with only a faint savoury note in the finish. The mashed center offered a mild sweetness, with sesame seeds contributing pops of nuttiness. However, it lacked the distinctive presence of the refreshing and mellow vanilla notes characteristic of candied wintermelon. Overall, while acceptable, these wife cakes fell short of the perfection found at Hang Heung Bakery.
