
Three Mills Bakery is a large artisan bakery in Canberra with a handful of stores around the city serving up freshly baked laminated pastries, pies and sourdough, as well as a large range of frozen pastries designed to be baked at home.

Spiced Apple Danish ($5.00).

The laminated layers were buttery and flaky, crisp on the outside but soft and tender on the inside, and critically, the base was also well cooked. The apple centre was generous, soft and spiced with notes of nutmeg and cinnamon, and while we’re not usually a fan of raisins, their sweetness balanced the tartness of the apples.

Cinnamon Escargot ($4.00).

The exterior featured an extra crispy caramelised sugar crust that held together tender buttery layers of laminated pastry. The cinnamon notes had depth with their subtle bitterness well balanced by sweetness. It was a very enjoyable cinnamon scroll, comparable to the one at The Flour Shop.
While brief, our encounters at the Three Mills Bakery left us keen to try some of their frozen pastries for baking at home if we see them in Sydney.
