The jars of marmalades for diluting into beverages at Korean grocery stores. They’re pricey, often coming to the same price as ready-to-drink bottles, but they also make delicious fruity drinks. This here is Home Cafe Tea & Ade Grape Fruit.

Diluting at a ratio of 1 part syrup to 4 parts water, the drink had a faintly sweet citrus nose. Served chilled, the same sweet citrus notes came through mellow ahead of the characteristic bitter notes of grapefruit developing in the body to create a rather dry, yet smooth mouthfeel that builds to a bright and refreshing grapefruit intensity before a bitter, yet enjoyable, finish. The grapefruit pulp in the syrup sinks to the bottom of the glass while stirring only suspends the particles briefly before sinking again. Drinking the pulp at the end, the grapefruit rind brought a sharp intensity of grapefruit flavour with a prominent sweetness, much like grapefruit marmalade. We’d enjoy this ‘ade’ more if the pulp was better distributed.
