The beverage presented with an opaque yellow hue, with clear sago concentrated at the base and orange-red grapefruit-like pomelo pieces suspended throughout.
Initial contact, after shaking, delivered a thin mango profile from the purée, although the liquid itself lacked the same vibrancy. The coconut component was also barely detectable, providing little of the rich, creamy character expected from a mango pomelo sago. At 50% sugar, the mango sweetness was already close to excessive without sufficient acidity or richness to balance it.
Through the mid-palate, sago provided the primary textural element, while the pomelo juice vesicles were present but too scarce to contribute meaningful contrast. Rather than providing the expected pops of citrusy sharpness to lift the sweet mango base, the limited pomelo presence left the sweetness largely unopposed.
Towards the finish, the mango sweetness persisted without developing additional depth, while the thin body and limited coconut character left the drink lacking the richer, more cohesive structure expected from the style. The sago added some textural variation, but insufficient pomelo and coconut prevented the components from integrating into a balanced progression.
Overall, a mango pomelo sago with a flat, sweetness-led flavour trajectory and limited textural integration, resulting in a thin and unbalanced structure where insufficient coconut richness and pomelo acidity failed to offset the mango sweetness.
