Arancini by Cristina, Five Dock

This is Arancini by Cristina, a retail, wholesale and catering shop specialising in home-style Italian cooking.

The menu centred on arancini, alongside lasagna, cannelloni, alla norma, Bolognese, chicken tenderloin schnitzel and veal schnitzel. There was no dine-in facility, with all items served to walk-in customers as takeaway.

Ragu Arancini ($8.95, large)

The arancini presented as a spherical piece approximately 7–8 cm in diameter, with a thin, crisp shell surrounding saffron-infused rice and a generous filling of slow-cooked beef ragu, peas and fior di latte.

Initial contact delivered a clean crispness from the shell before giving way to the softer rice. Through the mid-palate, the beef ragu became more prominent, bringing well-seasoned savouriness with a pronounced tomato base. The peas provided small points of sweetness, while the fior di latte softened the filling and added a mild dairy richness. Towards the finish, the tomato and beef profile remained prominent, with the crisp exterior and softer interior maintaining clear textural contrast.

 Beef Cheek Arancini ($11.95, large)

The arancini presented in a droplet shape, again with a thin, crisp shell surrounding saffron-infused rice. The filling contained tender beef cheeks, peas and melted fior di latte.

Initial contact followed the same crisp-to-soft progression, but the filling immediately presented greater richness. Through the mid-palate, the beef cheek contributed a deeper, more rounded savouriness, with its tender meat fibres providing a different texture from the more finely minced ragu filling.

The greater richness of the beef elevated this version beyond the Ragu Arancini. Whereas the ragu was more strongly defined by its tomato base and mince texture, the beef cheek retained a more substantial meat character. Peas and melted fior di latte moderated the richness without obscuring the beef.

Overall, the arancini were defined by thin, crisp shells, saffron-infused rice and generous fillings, with consistent textural contrast across both varieties. The Beef Cheek Arancini was the stronger of the two, with the tender meat fibres and deeper richness giving it greater structural presence, while the Ragu Arancini offered a more pronounced tomato-led profile.
