This is the Big MaMa ($5.00) from Sneaker Laundry Lab, a collaboration with restaurant marketing agency Lick Your Phone. Inspired by mango pancakes served at yum cha, it featured coconut water topped with matcha, mango coconut cream, a sour mango cube and another dollop of coconut cream.
The beverage presented with a layered appearance, with deep green matcha extending to about 2 cm below the rim, topped with bright yellow mango cream, an orange mango cube and a final white dollop of coconut cream. The drink was designed for the toppings to be eaten with a spoon before drinking the matcha beneath.
A spoonful combining the sour mango cube with both creams was indeed reminiscent of a mango pancake, with the light, fluffy texture of the creams pairing well with the mango’s acidity. The coconut cream added gentle nuttiness, echoing the coconut component of the dessert, while the sour mango provided freshness and contrast to the sweeter mango cream. Despite its voluminous appearance, the topping did not feel heavy or gratuitous, and remained functionally separate from the matcha coconut water beneath. Unsweetened, the coconut water provided a smooth, naturally sweet base that carried the grassy matcha notes without bitterness or astringency. The dairy-free composition also kept the beverage refreshing.
Overall, a dessert-inspired beverage with a progression from creamy, sweet-tart mango pancake flavours to grassy matcha, where the transition from rich, fluffy creams to smooth, refreshing coconut water prevented the beverage from feeling heavy.
