This is the Vietnam Deli Bánh Dừa Coconut Deli Original, a cracker inspired by traditional coconut sweets from central Vietnam made from fresh coconut (55%), sugar, sticky rice powder, rice powder and vanilla flavouring.
Each bag contained 10 individually sealed packages, each containing four crackers.
Each cracker measured 6.5 × 3.5 × 0.2 cm, with a rectangular shape and an even tan hue speckled with dark brown, brown and white. They were dry and relatively smooth to touch. Aroma opened with sweet, nutty notes of toasted coconut.
Initial contact delivered a satisfying dense, crisp crunch that persisted through to the mid-palate, where gradual rehydration of the coconut fibres produced a softer crunch towards the finish. The toasted coconut notes were immediate and aromatic, with a subtle vanilla presence and balanced sweetness emerging as the coconut fibres became more apparent. Compared with Cơ Sở Bánh Kẹo Thái Bình Bánh Dừa Nướng, these were thinner and therefore had a less dense crispness, while the more finely shredded coconut resulted in less chew and a less intense coconut flavour. They nevertheless provided a decent replacement in terms of texture and flavour, with the added advantage of being easier to source. Easily one for repurchase.
Overall, a coconut cracker with an immediate toasted coconut flavour progression and crisp-to-softening textural development, resulting in a lighter but still satisfying alternative to a denser coconut cracker.
