The sweet potato fries presented as thin sticks, measuring 5 mm wide, 2 mm thick and 3–6 cm in length, with a vivid purple hue ranging from pink to almost black and coated in a fine dusting of salt and sugar. Aroma was non-descript other than a general fried-food note.

Initial contact delivered sweetness alongside a very dense, crisp crunch that persisted through to the finish. Through the mid-palate, after several crunches, earthy sweet potato notes introduced a more subtle savoury quality that restrained the initial sweetness. Towards the finish, the flavour profile was no longer particularly sweet, creating an alternating sweet-salty-sweet-salty progression that is characteristic of the dan-jjan flavour profile commonly found in Korean snacks. The pieces were slightly oily to touch, with a slight oil flavour on tasting, but this remained acceptable overall.
Overall, a sweet potato snack with an alternating sweet-savoury flavour progression and persistent dense-crisp textural development, resulting in an engaging snack that encouraged repeated eating.
