
We picked up these Sealord Classic Crumb Dory Fillets to compare to their beer batter hoki fillets.

Each box contained 4 dory fillets (50%) caught fresh from New Zealand waters and covered in a classic crumb coating (50%). The fillets were about 10 x 4 x 3 cm and ready after baking for 11-15 minutes on each side in a conventional oven preheated to 200°C.

The crumbed coating on these fillets bakes to a crispy golden brown, while the fish itself remains flaky and moist. We’d return for these fillets — we can count on their texture and flavour every time — but they do lack the interest of the beer batter hoki fillets, which delivered on the beer flavour but not on crispness.
